About

Woody Mediterranean evergreen with needle-like leaves and a pungent, piney aroma. Perennial in mild winters; grow in a pot to overwinter indoors where it freezes hard.

Growing

Wants full sun and fast-draining soil — overwatering is the main way to kill it. Let it dry out between waterings. In cold zones, pot it and bring it in before a hard freeze.

Harvest

Snip 4–6 in sprigs from the soft new growth any time year-round. Never take more than a third of the plant at once. Flavor is strongest just before flowering; strip the needles or use whole sprigs.
