Hardy Mediterranean perennial with pungent leaves used fresh or dried.

Growing

Thrives in lean, well-drained soil. Cut back hard in early summer to encourage bushy regrowth.

Harvest

Start cutting once stems reach 4–6 in. Snip the top 4–6 in just above a leaf node, choosing healthy green stems with no woodiness. Flavor peaks just before flowering — pick stems showing tight flower buds before they open. Never take more than 1/3 of the plant; hang bunches to dry or use fresh.
