Harvest

Pick pods at 2–2.5 in. Harvest green for milder heat or fully red for peak heat and drying. Choose firm, glossy, upright pods, cutting the stem rather than pulling. Pick continuously to keep the plant setting fruit; the red pods dry well for crushed red pepper.
