About

Large, mild (~1,000–2,000 SHU) heart-shaped pepper used for chiles rellenos. Dried = ancho.

Growing

Tall plants — stake them. Likes long warm season.

Harvest

Pick at 4–6 in when dark green, glossy, and firm with thick flesh; choose heavy, flat-shouldered pods. Cut with shears rather than pulling. Roast and peel for best flavor, or let some ripen to red-brown and dry them into ancho chiles.
