The classic 2–3 in green hot pepper (~4,000–8,000 SHU). Ripens to red and develops corking lines (a good sign).
Growing
Loves heat. Side-dress with compost mid-season.
Harvest
Pick at 2–3 in when firm, dark green, and glossy; fine white 'corking' lines are a good sign of peak flavor and heat. Or let some ripen to red for sweeter heat. Choose smooth, heavy pods and cut with shears, leaving about 1/4 in of stem.
