Harvest
Pick at 3–4 in (10–16 oz) when deep, uniform red but still firm with only slight give. Choose fruit with no green shoulders and unbroken skin; a gentle twist-and-lift should snap it free at the stem. To beat cracking and pests, pick at the 'breaker' stage (first blush of color) and finish ripening on the counter.
